Oysters on the half shell are the ultimate coastal bite—fresh, briny, and served simply with lemon, mignonette, or a touch of hot sauce.

Ingredients

½ cup white or red wine vinegar
1 tablespoon coarsely ground black pepper
½ cup minced shallot
Sea salt to taste
2 dozen whole live oysters
1 tablespoon minced fresh thyme or tarragon leaves

Instructions

In a small bowl, combine the vinegar, ground pepper and shallot and mix thoroughly. Taste for seasoning and add salt as needed. Set aside.
Place the oysters on a plate or platter and artfully add a few fresh thyme leaves to each shell. Serve immediately with the mignonette sauce on the side, as well as lemon wedges, Tabasco sauce, bread and saltine crackers if desired.
